What does a winemaker do once the wine is bottled? In the case of Paola Andrea Cabezas Bono, she scrubs the grape stains off her hands and ties on an apron. The multi-talented award-winning Argentinian winemaker has just taken over the kitchen at Robert Channon Wine’s The Singing Lake Café.
“It’s not such an unusual step for me,” Cabezas Bono says, “I’ve always approached cooking with the same passion I do making wine.”
Cabezas Bono draws influences for her menu from her background and her world travels, including the cuisines of Italy, Argentina, Spain, and France, with the menu based in-season produce.
“I’m fortunate to live in a region that has an amazing breadth of incredible produce right on my doorstep,” she says. “I get fruit and vegetables from the local organic farm or from the Friday market here, as well as local organic pastured eggs, meat from the local butcher and I make all the butter, ice-cream and dulce de leche myself.”
